Boy Mom {Guest Posting}

Hey it's me again.. two posts in one day! 
I know right... never would I have imagined, but it is totally true! 

Well to be fair this second post is just a shameless promotion for my Boy Moms post over at Chasin' Mason today! I was so thrilled when Elizabeth asked me to give my take on being a boy mom! I have been following this series from the beginning and absolutely LOVE reading about other blogging moms' experience with having boys; heaven knows as boy mothers we need as much help/advise as we can get ;) 
A little sneak peak for you:

"I'm 90% sure you are having a girl" said the ultrasound tech at my 20 week anatomy scan. I wasn't at all surprised. Over the last 16 weeks, I had worked myself up to be scared to death to have a girl. I am not at all into girly things and I really have no idea how to be a girl myself, so how in the world would I be able to raise a girl and give her the true girl experience? Because the universe works in funny ways and I was really terrified to have a girl, I was sure I was going to be blessed with a baby girl just to show me that I could raise a girl perfectly well and it would all work out.

{Kids in the Kitchen}: What's for Breakfast?

Welcome to the first week of the Kids in the Kitchen series. To get the low down on all of the details, check out my introduction post. This week we are tackling breakfast. I knew I wanted to make something that included Myles' two favorite breakfast items: eggs and sausage. He is in a phase now when oyu ask him a question, you will get the same response 99% of the time. Anytime (day or night) I ask him what he wants to eat, he responds with 'eggs'. So it is safe to say that he likes eggs :) In the interest of being toddler friendly, I decided to go with the recently popular make-anything-into-a-muffin idea. So here is our first recipe for this series: 

Egg, Sausage, and Cheese Muffins

What You Will Need
*This makes 12 muffins. If you want to make more to freeze, just double everything.*
 
1/2 lb turkey breakfast sausage
6 eggs
1 cup wheat flour
 1 cup Colby-Jack cheese, shredded
1 tablespoon baking powder (not soda like in the picture!)
1/2 cup skim milk
Salt and pepper to taste

This version I thought was way too floury; we couldn't even taste the cheese or eggs. If your kids are not a fan of eggs or cheese and you are trying to sneak them in for protein/calcium, then this recipe would be great. However if you are like us and want to taste the egg and cheese, I would recommend using only a half a cup of flour. I will try that the next time I make these to see if that helps. 

Directions
1. Preheat oven to 350 degrees.

2. In a skillet, cook the turkey sausage. Chop up while cooking. 

3. Whisk eggs in large mixing bowl. Add cooked turkey sausage and the rest of the ingredients to the bowl.  Stir well. 


4. Spray, grease, or add liners to your muffin tin. Fill each cup to the top, using all of the mixture to fill the whole tin.

4. Cook for 20-25 minutes.



 5. Enjoy the yumminess and also feed your parents :)

This week was a great start to this series. I wasn't sure how much Myles would actually participate and help me, but I was pleasantly surprised and we really had a great time making a mess cooking in the kitchen! Can't wait to see how he does in the coming weeks!

This weekend was a fabulous one as far as weather is concerned. It is the middle of August and it was finally starting to feel like summer in Mid-Michigan.... until yesterday. This weekend, it was easy to work up a sweat while doing anything outside. Lucy Lou, loves to be outside all.the.time. but when the sun is shining, her black fur is hot hot hot.
On a hot summer day as a kid, I loved eating popsicles (who didn't?), so being the cool dog mom that I am, I decided to make Lucy some popsicles of her own.
